Ottolenghi to Headline Mandarin Oriental’s Amsterdam Debut

Amsterdam’s Museum District is set for a major transformation in early 2026. In a move that blends ultra-luxury hospitality with world-renowned culinary flair, the iconic Conservatorium Hotel has announced it will officially be rebranded as the Mandarin Oriental Conservatorium, Amsterdam in January 2026. The centerpiece of this highly anticipated relaunch? The arrival of celebrated chef, author, and restaurateur Yotam Ottolenghi, who will open his first-ever restaurant in the Netherlands within the hotel’s stunning glass atrium.

Master Chef

For Ottolenghi, this opening is more than just business; it is a sentimental return. Before he became a global household name with bestsellers like Plenty and Simple, Yotam lived in Amsterdam in 1995 while completing his master’s degree.

“Returning to Amsterdam is a bit of a walk down memory lane for me,” says Ottolenghi. “In the mid-90s, I loved the energy—everyone sitting on doorsteps drinking wine, riding bikes around town. Now, thirty-odd years later, we’re opening our second international restaurant just a stone’s throw from my old neighborhood.”

Expanding the Partnership

This marks the twelfth venue for the Ottolenghi group and continues a burgeoning partnership with Mandarin Oriental. It follows the successful 2025 opening of his first mainland Europe outpost at Mandarin Oriental, Geneva.

Susanne Hatje, General Manager of the soon-to-be Mandarin Oriental Conservatorium, views the addition as a vital evolution for the property. “In January 2026, the property marks an exciting new chapter. Ottolenghi Amsterdam will offer a community-focused dining experience that brings together hotel guests and locals alike, deepening our connection to the city’s social fabric.”
