This weekend, House of Noa will open its doors within the basement of the UNESCO-protected Beurs van Berlage. This new culinary late-night destination integrates gastronomy, design, and nightlife into a single evening experience. Drawing inspiration from international mainstays such as Hotel Costes in Paris and Chiltern Firehouse in London, House of Noa positions itself as an elegant, contemporary space where dining transitions naturally into late-night escapades accompanied by live DJs.
Layered Flavors and Omakase Precision
The kitchen is led by Chef Ken Srisangkhan, owner of the renowned Ken Sushi. His vision for House of Noa is rooted in the rapidly growing temaki bar scene of Asia—a social and dynamic dining culture centered around hand-rolled sushi. The menu features a curated selection of izakaya dishes, kaiseki-inspired plates, sashimi, salads, and oysters, forming a versatile culinary narrative.
Every dish is prepared to order and served at specific temperatures to optimize texture and flavor. This approach is shaped by the omakase tradition, where precision and timing are paramount. Balance, layering, and texture serve as the foundation for a menu that blends the refinement of omakase with the flexibility of an à-la-carte experience.
Signature offerings include the Spicy Tuna and Wagyu temakis, where flavors are built carefully to enhance one another. To transform the historic space, the team collaborated with Marie Martin, the creative duo known for high-profile projects such as the signature suite at Castille Paris and the award-winning Thai restaurant at Jumeirah Al Qasr in Dubai.
The interior design takes cues from the mystical atmosphere of a nineteenth-century Hong Kong opium den, infused with Parisian allure. Bespoke decorative elements, developed specifically for the venue, are paired with authentic Asian antiques and modern light and sound technology. The result is a warm, maximalist decor featuring heavy velours in deep tones, gold-leaf finishes, and tactile wall coverings.
